Method
 

  1. Gather your saucepan, mixing bowl, and parchment-lined baking dish to set up your workspace. Preheat your oven to 180°C (350°F) and toast the oats for about 5 minutes until fragrant and golden, then let them cool slightly.
  2. In the saucepan, melt the butter over low heat, stirring gently until just bubbling and smooth. This creates a warm, nutty aroma that fills the kitchen.
  3. Add the creamy peanut butter to the melted butter and stir until fully incorporated and glossy, about 2 minutes. The mixture will become fragrant and smooth.
  4. Pour in the honey or corn syrup and stir well, combining everything into a shiny, thick mixture. This will smell sweet and nutty, with a sticky texture.
  5. Transfer the toasted oats into the mixing bowl. Pour the warm peanut butter mixture over the oats and fold gently with a spatula until evenly coated and sticky.
  6. Line your baking dish with parchment paper and transfer the oat mixture into it. Use the back of a spatula or your hands to press down firmly and evenly, creating a compact layer.
  7. In short bursts, melt the chocolate chips in the microwave, stirring in between until smooth and glossy. Pour and spread the melted chocolate evenly over the pressed oat mixture.
  8. Refrigerate the assembled bars uncovered for at least 2 hours until the chocolate is set and the bars are firm. The aroma of chocolate and peanut butter will be inviting as they chill.
  9. Once firm, lift the entire block out of the dish using the parchment paper. Use a sharp knife to cut into squares, wiping the blade between cuts for clean edges.
