Ingredients
  

  • 6 large eggs preferably fresh and large
  • 3 tbsp mayonnaise for creamy filling
  • 3 oz cream cheese softened
  • 1 tsp salt to taste
  • 1/2 tsp black pepper optional
  • few drops red food coloring for bloodshot veins
  • few drops blue food coloring for irises
  • few drops yellow food coloring for irises
  • red gel food coloring bloodshot veins to draw bloodshot veins on whites

Method
 

  1. Place the eggs in a saucepan, cover with water, and bring to a boil over medium-high heat. Once boiling, reduce heat to low and simmer for 9-10 minutes until yolks are fully set. Carefully transfer eggs to a bowl of ice water to stop the cooking and make peeling easier.
  2. Peel the cooled eggs gently, then slice them in half lengthwise. Carefully remove the yolks into a mixing bowl, keeping the whites intact.
  3. Mash the yolks with mayonnaise, softened cream cheese, salt, and black pepper until smooth and creamy. This makes the base for the eyeballs' interiors.
  4. Transfer the yolk mixture into a piping bag fitted with a small round tip, or use a plastic sandwich bag with the corner snipped off. Carefully pipe a small amount of the mixture back into each egg white half, creating a rounded, eyeball-like shape.
  5. Using food coloring, tint small portions of the yolk mixture to create irises. Mix blue and yellow for green, red for bloodshot effects, or other colors as desired.
  6. Pipe the colored iris onto the top of the creamy yolk filling, adding a dot of black food coloring in the center for the pupil if desired.
  7. With a fine brush or a small squeeze bottle, draw bloodshot veins and bloodshot effects across the white of the egg using red gel food coloring. Add small lines radiating from the iris for a realistic bloodshot look.
  8. Brush a light glaze of clear edible glaze or a small amount of corn syrup over the eyeballs to give a glossy, eerie look that mimics a glazed, wet eye.
  9. Arrange the spooky eyeballs on a serving platter, and refrigerate for at least 15 minutes to set before serving. Enjoy these creepy, edible works of art at your Halloween party!
