Ingredients

  • 2 cups all-purpose flour sifted
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup honey for sweetness
  • 1/2 cup vegetable oil
  • 3 eggs large eggs
  • 1 cup chopped mixed nuts and seeds such as almonds, walnuts, sunflower seeds

Equipment

  • mixing bowls
  • Loaf pans
  • Oven
  • whisk
  • Spatula
  • Cooling rack

Method

  1. Preheat your oven to 350°F (175°C) and grease the loaf pans.
  2. In a large mixing bowl, whisk together the sifted flour, baking powder, and salt until well combined. This creates a light, airy base for the bread.
  3. In a separate bowl, beat the eggs, then stir in honey and vegetable oil until the mixture is smooth and slightly frothy.
  4. Pour the wet mixture into the dry ingredients and gently fold together with a spatula until just combined. The dough should be slightly sticky but manageable.
  5. Fold in the chopped nuts and seeds, distributing evenly throughout the dough for added crunch and flavor.
  6. Divide the dough evenly between the prepared loaf pans, smoothing the tops with the spatula for a uniform appearance.
  7. Bake in the preheated oven for about 35 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  8. Remove the loaves from the oven and let them cool in the pans for 10 minutes, then transfer to a wire rack to cool completely. The crust should be crisp, and the interior moist and tender.
  9. Slice into thick pieces and serve warm or at room temperature, enjoying the crunchy exterior and soft, nut-studded crumb inside.

Notes

For extra flavor, sprinkle some additional chopped nuts on top before baking.
